Single Serve Peach Cobbler

Craving something sweet but trying to stay on your nutrition plan? Have trouble keeping sweets in the house because you end up eating more than you want? Single serve desserts are the perfect fix! Ramekins (like this one from Target) are great to keep around the house for just an occasion. You have a portion controlled dish that only holds so much, limiting the quantity you are able to produce and eat at one time.

 I am SO excited for the summertime farmer’s markets when my favorite fruits will be in season – especially peaches! This peach cobbler is delicious – with fruit as a natural source of sugar, you can feel good about indulging AND adding a fruit serving to your day!

Bottom Layer

1 fresh peach, sliced (can substitute canned peaches or peach cups packed in water - drained)

1 tablespoon brown sugar

1 teaspoon all-purpose flour

Top Layer

2 teaspoon all-purpose flour

2 tablespoon old fashioned rolled oats

1 tablespoon brown sugar

Pinch of cinnamon and nutmeg

1-2 teaspoons of unsweetened applesauce

1 teaspoon of unsalted butter (melted)

Directions

Preheat oven to 350 degrees F. 

Mix together the “bottom layer” ingredients in a bowl. Fill your ramekin with the mixture, pushing it down to fill all the gaps and make space for the topping. 

In a different bowl, mix the flour, rolled oats, brown sugar, spices, applesauce, and melted butter. Stir together until combined. Spoon the topping onto the peach mixture. 

Place the ramekin on a baking sheet and bake for about 15 minutes until the top is golden brown. 

This recipe is great to make on your own but also wonderful for entertaining. Substituting some of the butter in the recipe with unsweetened applesauce is a great way to cut calories from the dish while still enjoying that golden brown crust.
