Easy Cucumber Avocado Bites
Earlier this week we talked about tips to maintain your healthy eating at all those March Madness parties. Whether you are hosting your own party or going to a friend’s place, it’s great practice to try to incorporate vegetables into your party appetizers. It will break up the heavy foods and provide much needed fiber to help the digestive system function regularly. These cucumber avocado bites are light, refreshing, and will leave you feeling great!
1 avocado, ripe
1 cucumber, peeled and sliced into ½ inch thick pieces
1 tbsp lime juice
1 tbsp fresh cilantro
1 tbsp red onion, diced
Salt and pepper to taste
Cut the avocado in half and remove the pit. Use a cross-sectional method to make small avocado “cubes”. Unsure on the best way to cut an avocado? Check out the link here.
Prepare the mixture of lime juice, cilantro, red onion, salt, and pepper. Then fold in the avocado cubes so they don’t get smashed (or you will end up with guacamole).
Spoon the mixture onto your cucumber slices and serve.
